Apple pie cookies are about to be your new favorite fall dessert
Do you love dessert mashups? Whether it’s dessert lasagna, donut fries or churro cake, everyone’s favorite “meal” of the day is always improved with a little creativity.
And now, apple pie cookies are the latest and greatest dessert mashup to have the internet going crazy. Yep, pie cookies. Everything you love in a pie (the crumbly crust, the sweet filling) brought to life in a portable cookie.
The best part? Even though they look like something you would find in a fancy bakery, they are actual super-easy to make and utterly adorable.

All you need is a few apples, brown sugar, butter, corn starch, eggs, pie crust and apple pie spice (a combination of cinnamon, nutmeg, allspice, and cloves or ginger). Find a recipe for homemade apple pie spice at Simply Stacie.

Roll out your pie crusts on a lightly floured work surface. Roll out one crust to be slightly bigger than the other, so that you will easily be able to crimp the ends and close the pie when it’s time.
Put about a tablespoon of your filling into the dough. Then, using a round cookie cutter, cut circles out of the other pie dough. This will be the top of the “pie.” Take the tops and place them on top of dollops of apple filling, crimping the edges to keep them closed tightly.
